That Street Corn Dip On Top Is A Game Changer.
The TLDR: roasted sweet potato, saucy seasoned ground beef, pickled onions, and a street corn-inspired dip over the whole thing. You can eat it with chips, or you can eat it with a fork. It is DELICIOUS.
Remember the hot honey cottage cheese bowls trend from a few months ago?
There was a trend going for a while that involved sweet potatoes and ground beef, with a dollop of straight cottage cheese over the top, and a drizzle of hot honey. My hot take: it always just felt a little forced. Dollop of straight cottage cheese on top? Just… straight?! I don’t know about it.
Hear me out: this is that same trend, but massively improved. The cottage cheese now gets worked into a street corn reminiscent dip that is packed with flavor that makes the whole bowl just work. I love it so much more than the original.
The street corn doubles as a high-protein snacky dip.
All elements work beautifully for meal prep.
Family-friendly because each person can pick the elements that they want.
Not sure what is going on with me – normally I’m late and/or oblivious to recipe trends, but this is the third “viral” recipe trend I’ve tried (and loved) in a month. (See also: brownie puddings for two, and broth bowls.)
There are a lot of very weird things about living in this internet and social-media-heavy time, but the abundance of fun and amazing viral recipe ideas is a really nice little perk!

Make Your Street Corn.
Mix it all up! DELICIOUS. (That creamy stuff is the blended cottage cheese!)

I do this in the air fryer! So quick and they roast up perfectly.

I do this last so it’s hot for serving!

Pile it all in a bowl and dig in. Chips are an excellent choice.

Description
One of my family’s favorite easy dinners that works SO well for meal prep! Sweet potatoes and ground beef get dolloped with a creamy high protein street corn style dip that is bonkers delicious.
Ingredients
Units
USM
High Protein Street Corn Dip:
1 cup cottage cheese, blended until smooth
2 heaping tablespoons mayo
2 heaping cups frozen fire-roasted corn, thawed and patted dry
half of a large jalapeño, minced (ribs and seeds removed)
1/4 cup chopped cilantro
1/4 cup crumbled Cotija cheese
juice and zest from half of a lime
1 avocado, cut into chunks (optional)
1/2 teaspoon Tajín (optional and/or can just be a garnish)
Sweet Potatoes:
2 large sweet potatoes, peeled and cubed
1 tablespoon olive oil
1 1/2 teaspoons salt
Ground Beef:
1 tablespoon olive oil
1 pound ground beef
2–3 tablespoons taco seasoning (I use Siete mild taco seasoning, about half the package)
Optional:
Chips for serving
Pickled red onions for serving

Instructions
Make Street Corn Dip: Mix all elements together, saving the blended cottage cheese for last so you can control how much you want to add. Taste and adjust to your liking. (This doubles as a snack while you’re cooking. Win-win.)
Roast Sweet Potatoes: Toss the sweet potato cubes with olive oil and salt. Air fry at 375 degrees for 13 minutes, until tender and lightly golden. (Or roast on a sheet pan at 400 degrees for 25 minutes.)
Ground Beef: Heat the olive oil over medium high heat; add ground beef in chunks and cook, undisturbed, until you get some browning. Crumble into small bits, and add the taco seasoning and 2-3 tablespoons of water to make it a bit saucy.
Serve: Plate sweet potatoes and ground beef in a bowl. Top with the corn dip. I always have this with pickled red onions, but that’s up to you! And dipping into this with chips is delicious.
